While at Lucky Fabb, I got an e-mail inviting me to have dinner with the folks at Apothic Wine. I’d never heard of Apothic Wine before so I was extremely interested in seeing what the wine company was all about. The dinner was held at the swanky Graham Elliot Bistro here in Chicago. Upon arrival guests were immediately handed a glass of Limited Edition Apothic Rose to taste.
I must admit, I’m usually not a red wine drinker because I find the wine to be quite bitter. But this Zinfandel and Cabernet Sauvignon blend was the perfect medium, it wasn’t too sweet and it wasn’t too bitter. After a few moments of sipping and networking, I got a chance to chat it up with Apothic’s own winemaker, Boyd Morrison. He told me about Apothic’s wine offerings, how he came to be in the wine business and more, he was quite a joy to talk to.
When I tell you guys the caesar salad and sourdough crouton was nothing short of amazing, please believe me. The crouton seriously, melted in my mouth and when paired with the Rose wine, I was in heaven.
Lastly for dessert, I had stuffed beignets and more Apothic Rose.After trying all of Apothic’s Wine selection, I’m a new fan!
