Apothic Wine Dinner at Graham Elliott Bistro

While at Lucky Fabb, I got an e-mail inviting me to have dinner with the folks at Apothic Wine. I’d never heard of Apothic Wine before so I was extremely interested in seeing what the wine company was all about.  The dinner was held at the swanky Graham Elliot Bistro here in Chicago. Upon arrival guests were immediately handed a glass of Limited Edition Apothic Rose to taste.

Apothic Wine Dinner

I must admit, I’m usually not a red wine drinker because I find the wine to be quite bitter.  But this Zinfandel and Cabernet Sauvignon blend was the perfect medium, it wasn’t too sweet and it wasn’t too bitter. After a few moments of sipping and networking, I got a chance to chat it up with Apothic’s own winemaker, Boyd Morrison. He told me about Apothic’s wine offerings, how he came to be in the wine business and more, he was quite a joy to talk to.

Then it was time to sit down and eat…

When I tell you guys the caesar salad and sourdough crouton was nothing short of amazing, please believe me. The crouton seriously, melted in my mouth and when paired with the Rose wine, I was in  heaven.Apothic Wine Dinner

For the 2nd Course we sipped on Apothic White that was paired with lemon risotto and whitefish.IMG_2688

The whitefish was seriously, some of the best whitefish I’ve ever had; pairing this dish with Apothic White was magical. IMG_2689

If you love risotto and citrus dishes, then the lemon risotto is definitely for you.IMG_2690

During dinner we continued chatting away about what else? Wine and food!IMG_2697

For the third course, I had roasted chicken paired with Apothic Red.
